Founder: Christian Dominique
As the founder and visionary behind Manjay, Christian Dominique brings Caribbean culture to life through flavor, design, and experience. He imagines every dish, space, and detail as a celebration of the islands — blending tradition with modern creativity. Driven by a mission to make Caribbean cuisine mainstream, he continues to shape Manjay as more than a restaurant: a vibrant expression of Caribbean lifestyle, pride, and soul.
Manmi: Julia (Haiti)
Gran Moun is the heart and mother figure of the Manjay kitchen. With quiet dedication and deep care, she prepares the foundations of every dish — washing, chopping, seasoning, and nurturing ingredients long before service begins. Her hands carry the patience and love of home cooking, ensuring consistency and soul in every bite. Behind the scenes, Julia’s presence keeps the kitchen grounded, cared for, and truly Caribbean.
Mama: Ginette (Bahamas)
Ginette is the steady force behind Manjay at The Citadel, serving as supervisor and guardian of standards. She ensures every dish is executed exactly as intended — flavors balanced, presentation right, no shortcuts allowed. Firm, fair, and deeply committed, she’s known as THE BOSS, keeping the team focused and accountable. Thanks to Ginette, every plate leaving the kitchen reflects the consistency and pride at the heart of Manjay.
Catering & Events: Weit (Martinique)
Weit leads Manjay’s Catering & Events with structure, vision, and a shared Caribbean spirit. Originally from Martinique, he brings cultural understanding and strong commercial focus to expanding Manjay beyond the restaurant walls. He builds partnerships, develops catering opportunities, and connects our cuisine to new audiences and communities. With his disciplined approach to service and growth, Weit helps carry Manjay’s island experience into memorable events across South Florida.
